(3) Fillet of beef Carpaccio with Manchego cheese, ruccola with olive oil and roasted pumpkin seeds
(4) Seared fennel-gravad salmon with celery and bleak roe salad
(5) Classic Skagen canapé topped with lavaret roe
(6) Lobster and seafood tart with crostini and Mälar Lake bleak roe
Main Courses
(1) Steam cooked Mälar Lake fillet of pike perch with potato and parsnip timbale, Mälar Lake bleak roe, pak choy and lemon and fennel veloute
(2) Tournedos with roasted red beets, smoked pork belly, crispy caprice, pommes pont neuf and green pepper sauce
(3) Oven-baked fillet of char with a sauté on raisins and a risotto cookie with herbs
(4) Grilled beef of ox with vinegar-glazed smoked pork belly, sugar peas, shallots, pommes fondant and port wine sauce
(5) Fried fillet of deer with butter-fried chanterelles, champignons, salsify, rosemary sauce and roasted potatoes
Desserts
(1) Thai crème brûlée with pineapple compote
(2) Chocolate tart, preserved berries of the season and vanilla ice cream with coffee caramel
(3) White chocolate pannacotta with raspberry coulis and almond flake
